That seems to be a common myth among many diabetics, Joel. But, it isn't true. According to Good Health (www.goodhealth.com), beets are an excellent choice for persons with diabetes or pre-diabetes. Not only is this vegetable low in calories, but also a good source of fiber, folate, potassium, magnesium and calcium. Beets are slightly higher than most vegetables in carbohydrates but the glycemic index is neither high nor low.
That doesn't make sense. How can beets be good for a diabetic when beets are what they make table sugar from?
